Spicy Shrimp Salad with Cool Mango Dressing
Ingredients
1 mango
1 tablespoons lemon juice
1 pound large shrimp, peeled and deveined
1 tablespoon chicken stock
1 teaspoon chili powder
1/4 teaspoon hot-pepper sauce
1 1/2 cups chopped pineapple
1 cup chopped tomatoes
1 red onion, this sliced
2 cups torn kale leaves
1 mango

Directions
Peel the mango and cut the flesh away from the pit. In a blender or food processor, puree the mango and lemon juice.In a large nonstick frying pan over medium-high heat, combine the shrimp, stock, chili powder, and hot-pepper sauce. Stir until the shrimp are well coated with the seasonings and cooked through. This should be around 3 minutes.Remove from heat. Add the pineapple, tomatoes, and onions.
