Amazing Veggie Burger

Ingredients
2 Tbsp EVOO
2/3 cup uncooked brown rice
1 1/4 cup dried lentils
1/4 cup chopped onion
3 cups water
1/2 tsp salt
1 egg or flax egg
1 1/4 cup breadcrumbs
3/4 cup Parmesan cheese
1 tsp dried basil
1/2 tsp minced garlic
Directions
Heat 1 Tbsp EVOO in a large sauce pan. Add the onion and rice and stir until golden brown.
Add lentils, water & salt and bring to a boil.
Reduce heat, cover, and cook until all the water is absorbed – approx 40 min.
Add additional water if needed, it should be thick.
Remove from heat and let it cool.
Add lentils & rice to a food processor. Add egg, breadcrumbs, basil, cheese & garlic. Process until well combined & the texture of ground beef.
Form into patties, about 1/2″ thick.
Heat remaining Tbsp EVOO in a large skillet.
Cook patties in batches; drain on paper towels.
Serve on a whole wheat bun with all the fixin’s or put them in an airtight container in the fridge. They also freeze really well!

Funny Story about the recipe : My whole family loves these! This recipe makes about 12 burgers (freeze some!). Feel free to add more spices or jalepeno peppers to jazz them up!
