Energy Balls
Ingredients
1 cup rolled oats
2 TBSP ground flaxseed
2 TBSP chia seed
1 TBSP cinnamon
1/3 cup vegetable protein powder (chocolate or vanilla)
1/4 cup steel cut oats
1/4 cup dried cranberries -chopped
1/2 cup natural almond butter, or another nut butter
1/4 raw honey
1/2 cup water
1/4 cup water used to prepare chia seeds

1/4 cup dried cranberries -chopped

Directions
Prepare the chia seeds first. Put the 2 TBSP of chia seeds in 1/4 cup of water, in a separate bowl. Let sit for 15 minutes.
In another bowl, add all the dry ingredients, except the steel cut oats.
Then add the wet ingredients to the dry mixture. Stir well. Add in the chia seeds (they will have expanded, creating a gel.)
Form the batter into balls. Place on a small cookie tray or plate. Place the tray in the refrigerator for 20 minutes to harden a bit.
Pour the steel cut oats onto a plate.
Remove the tray of balls from refrigerator and lightly moisten the outside of balls with water.
Lastly, roll the balls in the steel coat oats (could also use coconut flakes, cocoa nibs or chopped nuts).
Enjoy this healthy form of energy!
